How to make Ichigo Daifuku - Lucky Strawberry Cake

How to make simple Ichigo Daifuku at home.

Ingredient:

+ 100g Mochiko flour for making Mochi cakes (or you can substitute with glutinous rice flour)

+ 80g white granulated sugar

+ 150ml cold water

+ 6 strawberries (corresponding to 6 cakes)

+ 100g cornstarch (cornstarch)

Step 1: First, you cut off the stem of the strawberry and wash it, leaving one side to dry.

Step 2: Take a large bowl, then add Mochiko powder (or glutinous rice flour), sugar and about 1/3 of the water and mix well. If the dough is a bit dry, continue to add water, one spoon at a time, adding water while stirring to prevent the dough from becoming mushy.

Step 3:

1. For homes with microwaves:

When the dough has been kneaded, put the dough bowl in the microwave at 600W for 3 minutes. Then take it out and mix well, then continue to put it in the microwave to rotate for 1 minute, take it out and mix again until the dough is thick, elastic, slightly cloudy.

2. For homes without microwaves

Using the steamer:

When the dough has been kneaded, steam the dough for about 30 to 40 minutes, until the dough is elastic and slightly cloudy.

Use a non-stick pan:

When the dough has been kneaded, put the dough into the pan, turn on medium heat. Stir continuously until the dough thickens, becomes pliable and has a slightly cloudy color.

Step 4: Put the cooked flour mixture into a tray already covered with cornstarch. Sprinkle with enough cornstarch so your hands don't stick.

Step 5: Use a rolling pin to roll the dough into a thin rectangle or square, then cut into equal parts.

Step 6: You put a part of the dough on your hand, put the strawberry in the middle of the dough, then wrap it. You wrap the strawberry from the bottom up, you don't need to wrap it all, you can leave it at the top.

Step 7: Continue to do the same with the remaining mochi dough with 5 strawberries. That's it, 6 Ichigo Daifuku cakes are done.
